Cooking, Cooking, Cooking

Guess who again - the lonely blogger. Have I mentioned the great weekend we had in Missoula for Pie's high school graduation - it was all wonderful with a nice ceremony, great picnic and food times two and time to play "ticket to ride" 2X. we really enjoyed spending a couple days at Emmy's house and as always appreciated Tempie's lovey home which she shares so lovingly with us so often.

Anyway - Loren keeps saying i need to put up some of the recipes i keep talking about on the blog so instead of doing the second of my "C" blogs thought i would just tell you about the food we did this weekend - mostly good. This is an example of a typical weekend that then creates left-overs for the week and Bob's lunchbox.

So we are set for the week - salad stuff & fruit in fridge along with brown rice made to go with black bean chili in lunch boxes or whenever - another serving of chicken slaw, plenty of couscous. Of course it's all about the serving size! So isn't this just all over the top!!!

The hard thing is I've made tons of new recipes but we never go back to them and repeat some favorites - think i need to get this all organized into a little cookbook so we can find them - like our favorite Black Bean & Mango salad - yum.

Tonight I'll post the chicken slaw and later the dinner we had last Sunday with mom & dad - Balsamic Dijon Chicken and Penne with Walnuts & Peppers -- all were very good. And I'm sure the chicken would be really good actually grilled as should be instead of broiled like i do.

Sweet & Sour Chicken Slaw
Diabetic Living Summer 2008
4 servings (1 3/4 cups each)
using spreadable fruit in the salad dressing instead of high-sugar jam keeps calories low
12 oz. cooked chicken shredded (i had frozen some last time i stewed a chicken but can use deli chicken or canned chicken also)
4 cups packaged shredded cabbage w/ carrot (coleslaw mix)
1 cup fresh pea pods, trimmed & halved
1/4 cup raspberry spreadable fruit (in jam section)
2 tablespoons canola oil
4 teaspoons cider vinegar
1 medium red apple, cored and chopped fine

In a large bowl, combine chicken, coleslaw mix, & pea pods; set aside. In a small bowl, whisk together spreadable fruit, oil, and cider vinegar; add apple and toss to coat. Add apple mixture to cabbage mixture; toss to coat. Cover & chill until ready to serve.
285 cal., 10 g total fat (1 g sat. fat), 72 mg chol., 81 mg sodium, 21 g carb., 3 g fiber, 28 g pro.

Kids can make this and can all be done with easy not to expensive stuff. Great on hot summer evening.

Now you can cerify for sure - she's lost it!

i can't wait to be home enjoying these delicious meals!! Wait... will i really get to? you seem to halt the gourmet cooking whenever i'm home... i mean not counting "the wedge"
